ci: fix goreleaser nfpm README path and bump to 0.122.6

Browse Source 
- goreleaser nfpm contents pointed to ./core/README.md which doesn't
  exist; switched to repo-root ./README.md
- bump VERSION to 0.122.6 for third pipeline test
